I have been told by a few different people at dealerships that new motors nowadays dont have to be broken in like the old days. True or False?

Drive it like you would under normal conditions, just try to vary the RPMs when you drive. You should let it break in atleast 200-500 miles before you start with the dyno pulls or racing.
